2.85 Pound Prime Ribeye

Saw this at costco and figured why not. I had a rough last two months with my father passing away and decided to treat myself and my girlfriend to a nice steak.

Fired up the performer and put the coals in the vortex all the way to one side. Seasoned up the ribeye with salt and pepper. Put the ribeye directly over the vortex for 2 1/2 minutes per side and then moved it off to the side of the vortex for the rest of the cook. It took about 45 minutes to get to 125 internal. I took it off and let it rest for five minutes. Then took it off the bone and cut it in half for both of us with some grilled asparagus. Never cooked a steak this big before, but I think it turned out perfect. Gnawing on the bone afterward was fun too.

Sorry for your loss. I lost my dad when he was aged 49, and I was 23. We worked together in the family business every day. He gave me a great start in the world (along with a great mom) and for that I am truly grateful!

Andy, I know from experience that food can help you heal! .....and my dad would have loved that steak (we cooked each other many a steak when he was still around), it looks perfect.

Get a vortex now! Made wings Saturday Night and by far the best I've ever made and best part was no flipping required! It is a must have imo.
 
I too recently lost my dad. The Tomahawk Rib eye is an excellent remembrance cook. Yours is perfectly done
