    Sauce ingredient

thanks for such quick replies. I was thinking it was just a spice. But the raisin and orange peel part may be...... I'm not familiar with some of those spices mention in the first post, such as tamarind, fenugreek or cardamon. My mustard sauce has cumin in it. Which of those do you think...

    Sauce ingredient

Does anyone know what the spice is that gives A-1 sauce it's distinctive taste? I ate at a BBQ place that had a sauce with an ingredient I had never tasted in BBQ sauce before but knew I had tasted it somewhere. I figured out it was in A-1 sauce. My wife, who has a nose like a bloodhound...

Sissies!!!!! Well, I'm not gonna say that ain't so with some of them. You know, the ones with the matching cap, shirt and shoes that eat salads and sushi. But that ain't me! I'm more the muscle car, fire up the smoker and throw some meat on it type guy. My not yet world famous smoked...

Arkansas > Bryant: Whole Hog Cafe

http://www.wholehogcafe.com/ They have several different sauces and anyone should be able to find one to their liking. As far as the meat goes, no smoke flavor. They are pretty average for around here.

    Arkansas > DeVall's Bluff: Craig's Bar-B-Q

I ate there last weekend. It's been driving me nuts trying to figure out what that unusual taste is.....the taste you get with the first bite is almost overwhelming. Then it starts getting good to you. I bought 2 bottles of their sauce and have had a little of it on something about every day...

    New Performer

Hi everyone, I got a new performer this past weekend. I've been grilling on an old offset and the performer makes it soooo much easier. I was looking for a grill that could be ready to cook pretty quick and without much hassle. I just couldn't bring myself to go with a gas grill. The...

Smoking Tips of the Newbs, By a Newb, For the Newbs

Thad, Welcome from a fellow Arkansan. Looks like you are off to a great start. I have been smoking meat for years but bought my WSM in May, I think, and started reading the great advice on this site. My cooking has improved greatly since, mostly due to learning to use a probe to tell when...

    Why???

Experiment!!!! Go get a couple of racks and cut them in half. Do the four separate pieces differently and see how it works out. Be sure to smoke one of them naked, just a little salt and pepper. If it is hammy it has to be the wood or salt but I'd bet it wont be hammy.

    i dont get it

I believe Kevin is right when he said the larger cuts were cooked in some way to prevent burning. I also think that "back in the day" people cooked meat til it was well done to avoid diseases. At the time they didn't have foil to protect the meat from high heat. I assume some of them rigged...

    Giving Ribs the "BIG REST"

It doesn't bother me to cook anything a day ahead of time. I prefer ribs and brisket the next day over eating it the same day. To me it's just better. Pulled pork, I haven't made up my mind about that, I may prefer it the same day as it's cooked. But I cook it ahead of time, at times, anyway.

How to smoke ribs not neighbors?

I thought the smiley face indicated I was only joking. However, as the X once pointed out to me, things I think are funny are not always funny to others. I have my doubts Andrew's neighbors could tell he was cooking pork by the smoke smell coming out of his smoker. If they could, they have...

I think I messed up...how to clean the bowl?

With the exception of the grates the food sits on, I go with the theory of if the water hose don't get it off it can stay there. I do foil the pan though.
