How to get WSM up to 325-350

Put a fan outside one of the vents and it will heat it up for sure. Adjust the temp by adjusting that vent.

    Running an empty water pan

Here is what I found when running my cyberq and I just cover my water pan with foil. First I sealed the wsm door and lid to middle section. I start with the can method and like 3 hot briquettes. I will ramp my temp up so I don't overshoot, if it does, it's really tough to get back down...

    Friday Ribs

Smoked 2 racks of baby back ribs on the 18 with the cyberq yesterday. Used a mix of kbb and royal oak lump. The chunks were hickory, apple, and a piece of pecan. It was the first time with baby backs. I normally do spare ribs. One had sweet rub of mine, turbinado sugar, and cinnamon...

    WSM 22 Fan recommendations

From researching for myself, I believe the bbq guru fans are the way to go with the fireboard. I have a cyberq with bbq guru fan and love it. I have been looking at the fireboard though. Check the compatability but I'm almost positive it works.

Still not as good as when my mom's cat was killed by a car. She buried it and gave it a funeral. The cat walked up and attended! It was the wrong cat. True story!

Is there a trick to adding lit charcoal to the WSM?

I use a piece of sheet metal folded in a v shape, to use as a chute to pour the charcoal into the smoker. Makes it easy to pour in the center through the door.

    New here need advice.

I have the 14, 18, and 22. I love the 18 and 22. I also have a cyberq temperature controller that I move from one to another, love the set and forget. I bought some gasket material for a green egg and used it around the door and cut it in half to use around my lid to help with air flow since...

Pork butt safety question, first time ever had this problem.

I believe he was saying that there isn't a time factor in getting to that temperature ex. Must reach 130 within 4 hours. Not that it didn't need to stay at that temperature for an amount of time ex. Stay at 130 for x hours.

Pork butt safety question, first time ever had this problem.

I agree. I have run about this amount quite a few times before but it took the atc with fully open damper and the other 2 bottom vents fully open and still wouldn't rebound after I put the meat on for a looooooong time...... until my wood chunks caught on fire after opening the door.

Pork butt safety question, first time ever had this problem.

I did that a few times. The last time I did it for about 4 minutes. Wood chunks caught on fire. Closed the door and after about 2 minutes the temp came up to 250. I was kind of wondering what happened but I guess it was so much meat that it took a fire to get the temp up. Go figure.

I think your theory could be what happened. I do remember having water on my hand after holding above top vent to check my temp. I thought it was really strange considering I run an empty water pan.
