Friday Ribs

Smoked 2 racks of baby back ribs on the 18 with the cyberq yesterday. Used a mix of kbb and royal oak lump. The chunks were hickory, apple, and a piece of pecan. It was the first time with baby backs. I normally do spare ribs. One had sweet rub of mine, turbinado sugar, and cinnamon. Wife likes sweet but no heat. I tried a new rib on the other, twistdq sweet heat. It has a really good kick but not extreme. Wrapped them both with turbinado sugar, rub, and Dr Pepper. After pulling off the smoker, put them on grill for about 45 seconds and used sweet baby rays on the wife's. They both came out ok. I am having trouble getting my ribs to come out with a good flavor profile. Guess I'll have to try again 😁. Seriously though, I keep getting ok ribs but nothing to get excited about. I've tried different rubs, wrapping, unwrapped, different liquids in the wrap, just can't seem to get them there. My pork butts are where I like them, just the ribs escaping me. Found one more way to not try again lol. The wife does like the sweet ones though. She now asks me for them each time but wants them even sweeter, thinking of adding icing next time lol.

I had the same issue until I went 100% lump. I felt the flavor of the KBB blue bag overtook my own seasonings. Once I switched I never went back.
