    I use the WSM in that size , but foil the pan no water. My first cook or two the temps went a bit high , but now it is gunked a bit inside the temps are a lot more stable. They really are great things ......

    Would just like to say hello to the forum . I have been reading it for a while and thought it was about time I joined and started to post. I own a 57 inch weber kettle which I have recently started doing low and slow on . Probably end up with a wsm got my eye on one anyway. Regards Martin
