This year is a special year for our Super Bowl. I always fix brisket, so this year we are going for gold.

Getting it ready to be seasoned.

Will be PBC this bad baby in the morning. Way to cold for the WSM. Its been at 0* or below every morning this week. Will be glad to see some warmer weather soon.
Have a great day tomorrow everyone.
More pics to come tomorrow.

Wow, that brisket looks awesome!!! Can't wait to see the final pics!!!! I'll be doing Super bowl Ribs!

Here I'm crabin about it being 25* here in the morning, at least the next 10 days will be in the high 60s, finally a little warmth. That is a gorgeous piece of meat Russ, know you'll do it proud.
Barb is going to fix up some special burgers with homemade buns and a different spin on onion rings. Along with some homemade quac.
Enjoy the game be rooting for the Broncs along with you.

We're doing wangs (chiptole-lime and roasted pineapple-habanero), grilled/marinara-baked meetballs, and Conecuh sausage (a local sausage), along with various chips and dips and I think there's a veggie tray in there somewhere.

Russ, that's a nice piece of meat looking forward to your other pics. Have a great day and like Rich said we'll be rooting for the Broncs.

BRITU Ribs and pulled chicken from the WSM, more from the inside of the house as well.

HAve to say I have been hankering big time to do a brisket and your pic certainly has me jonesing! I bet you it will be AWESOME!

That's going to be insanely good Russ. I'm making some Go Manning Go Denver ribs

I'll trade a rib or two for a slice

Here in So Cal it's going to be about 80* today, nothing but sunshine and blue skies. This makes for a great day for Wings & Ribs with Tater Salad & Beans. I think the game may end up being secondary. LOL. Good luck and good eats to all.

Whoa...I'm pretty confident your wagyu brisket is going to be otherworldly, Russ...can't wait to see some photos of the slices after the cook. I've cooked the SRF Black Grade brisket before, and was blown away, so I can't even imagine what a Gold Grade one will taste like. Enjoy the game!

As for what I'm cooking, it'll be Kentucky style BBQ lamb shoulder.

Smoking a rack of St. Louis Ribs. Now for the good stuff. That brisket is definitely Gold. After Jerome's post on New Years, I did some serious browsing on Snake River's website. I was like a kid in a candy store. Gorgeous meat. I must say I was knocked back on my heels when I saw the prices. Regardless, you get what you pay for and it's on my radar for our next really big special occasion.

Being a proud Carolina Panther fan, I'm making the same thing I've made for the last 2 playoff games, sliders and wings 2 ways! I'll post pics later. Go Panthers! Keep pounding!

I have 2 small racks of back ribs on the WSM right now, and later I'll be grilling wings 2 ways: marinated in Crystal Louisiana hot sauce (Peyton Manning's LA roots) and a mustard sauce (they're the Carolina Panthers, not the North Carolina Panthers). I also have some Volpi prosecco salami, cheese, and crackers for snacking.

Gee, all I have is leftover Carolina pulled pork. I guess I'd lose in a head to head match-up with freshly-smoked Colorado brisket. :D

Wow Russ that brisket is a thing of beauty, can't wait till the pictures start rolling in on this cook.
I hope Payton Manning can go out a winner today, best wishes from a Charger fan.
