Wednesday Taco Night

Changed things up a bit and went with Carnitas Tacos, Rice and Beans. Did the Carnitas a couple of months ago and froze meat into half pound packets. Thawed one out last night. This is Robert R's recipe which has pretty much become my go to recipe for Carnitas. Sure miss seeing Robert around. The beans and rice areTony's. Here's a few pic's.

These two shots are from the original Carnitas cook a couple of months ago. Smoked on a 22" Weber Kettle. No action shot as the pan was covered tightly with foil. Browned under the broiler for a couple minutes.

Looks awful tasty Cliff. Looks like your getting ready for next week. Cinco De Mayo is falling on "Taco Tuesday" this year.
 
I LOVE carnitas! Whenever we go to a new Mexican place, that's what I order to see if we'll go back! :) Those are some great looking tacos, Cliff, and nicely sided with Tony/Maribel's beans and rice!
