Wagyu Filet Mignon

I got some wagyu tenderloin from Snake River Farms when they had a sale on filet mignon a while back, and let it thaw in the fridge a couple days ago so that I could try it this weekend. This was probably the best filet mignon I've ever tried, much more juicy than conventional beef tenderloin. That being said, in general filet mignon just isn't near the top of my list of favorite cuts of steak, even when it is wagyu. Still, I'm glad I tried it.

Some shots of the filets out of their cryovac, and a photo of the steaks seasoned with Dizzy Pig Raising The Steaks rub.

Action shots of the cook, using the reverse sear technique with Rockwood lump as the fuel.

Photo of the steaks resting after being taken off the grill, a plated shot of a filet served with roasted potatoes & cauliflower, and finally a cutaway view of the beef. Thanks for checking out the photos!

I agree with Barb , Tony,Chuck and Rich. Great cook. And I feel the same way about FM...not my top fave , but I sure would like to try that one !

I agree with Barb,Tony,Chuck,Rich, and Frank. Great looking Wagyu.

I don't usually do filet, but my goodness, that is just a gorgeous piece of meat. Thank you for sharing that . . . although I am now a bit disappointed with the pork chops that I'll be having in a few minutes. :)

I agree with Barb, Tony, Chuck, Rich, Frank & Jeff those are some mighty fine looking steaks. Have been wanting to give SRF's a try.
