When you go to Harry Soo's barbecue class, you get a homework assignment. He sends you home with some of the SYD rub made during class, and you're supposed to cook something with it within 2 weeks and share the results on his alumni Facebook page.

Here's my homework assignment...best tasting homework I've ever done!

Tri-tip trimmed carefully, seasoned with granulated garlic, white pepper, and SYD rub. Refrigerated for 8 hours. Grilled on the Weber Summit, let rest for several minutes, brushed with SYD all-purpose sauce, and sliced. Layers of spice from the white pepper and the SYD rub and the cayenne & hot sauce in the SYD sauce. Really delicious! I'll definitely do this assignment again and again.

Nice job, Chris!! I would love to have the opportunity of studying with Harry Soo... As it is, I make up and use his basic rub (even made a low sodium version) and follow his recipe and technique for ribs and pulled pork. I hope to try his Salmon recipe later this spring.
