Apple wood smoked pork loin. Stuffed w/ bacon,herb seasoning,and andouille sausage,glazed with a tangy-sweet, apple jelly glaze."Nola Mae" did a good job of holding a steady 300* for 2 hrs. till I pulled it

Thanks for all the wonderful complements. This was my first attempt at cooking a stuffed loin. The layer of thin bacon helped to add moisture, but not much. I think the next one I cook I will try brining in some sort of apple juice brine for a couple of hours. Don't get me wrong it was far from being dry. I'm just thinking another layer of flavor and moistness.I have to admit the flavor was fantastic. Love my JJ !
