Southwestern Style Pork & Biscuits

Had dinner all planned to be cooked on the performer, but had to go with the gasser because of our high winds. Starting with the ingredients to be used. I partial cooked the pork 4 minutes a side in the CIS then out and cut into small pieces. Sautéed onions and celery for 5 minutes then added thyme and flour. Then added the chicken broth brought up to a simmer and then added pork back in. Cooked about 15 minutes then added bell pepper and corn.

While that was cooking mixed by flour, cheddar, scallions, baking powder, S&P and cayenne together. Then added heavy cream and chicken broth. I used a ¼ measuring cup to scoop out dough into 9 mounds.

Back on the gasser till biscuits were golden and filling was bubbling about 20 minutes.

Done and brought in to rest and get ready to plate.

Plated and was it delicious. Will be trying this again with chicken or beef.

I'm dying here looking at these photos..not sure how much more I can torture myself. I pretty much love anything involving biscuits, and to cook them in the same pan as the southwestern pork is pure genius! Phenomenal post.
 
This is something that I will have to try Barb. I have never seen biscuits done like this, maybe I have lead a sheltered life?
