Roasted Tomato Soup

Our garden is producing tomatoes faster than we can eat or freeze them, so the Lady of the House came up with the idea of making some tomato soup and we decided to roast/smoke the veggies. Everything was roasted direct over low heat about 250 - 300.

First batch of tomatoes

The tomatoes were roasted for about 15 minutes, the onion and garlic were roasted for about 25 minutes

Everything in the pot waiting for the homemade chicken stock and other stuff

The Lady of the House did everything else and used an immersion blender to blend everything together.

Honestly some of the best soup we have eaten. A real earthy taste and you could smell the smoke on the soup, a winner for sure

A couple of weeks ago I did a post with some beautiful Oregon blue sky, my buddy Cliff asked me where all of the smoke was, well Cliff it's in our valley now

Things have been really crazy around the house, I'm still doing cooks just not getting enough pictures, plus we are having the house painted and it's hard to grill with the patio looking like this

The grills are in there somewhere, but I did throw on some spiral dawgs today, love this style of cooking brats

Thank you all for looking and keep posting those beautiful cooks of yours.

Awesome looking soup, I'm going to have to try that. I make all my own stocks as well, I hate the idea of not using the whole animal/plant.

Tomato soup looks great and a great idea to use the grill to enhance it. Hope you had some grilled cheese sandwiches to go with it.

Love it...wish I could help ya out with some of those excess tomatoes!! That soup looks super!! Nice work!!

Wow, great idea. We've been canning salsa and marinara and plain tomato sauce, along with crushed tomatoes. Soup is a great idea and I'm sure it freezes well. Thanks for sharing.

OMG, James! That soup is amazing! Dogs are spot on too.

Out of my 4 tomato plants, I've gotten exactly 5 plum tomatoes this summer. The deer and the groundhogs are taking a single bite out of every single green tomato on my plants. Time to get a small firearm.

James, your soup looks ***ing delicious! I bet that it was nice dipping that piece of bread in the bowl.

Jim, that soup is absolutely gorgeous and I know delicious. Thank you for giving me credit for the smoky flavor. About the only good thing about smoke from the fires, it gives you beautiful sunsets. Oh wait, you had those without the smoke. Hang in there. Only about six weeks left, at least down here.

Outstanding soup! Just about the only thing I might be looking forward to this winter is eating all the tomato soup we canned last week. Pretty hard to ever eat tomato soup from the grocery store again after you get used to good home made stuff.
