double-decker on the 26" OTG Weber Kettle using the snake-method with hickory wood for smoke

Meanwhile, I fired up the Performer equipped with the 22" WSM lid to accommodate TheGaryRibHanger

smoked the sausage for about 90 minutes at 225°F over apple wood

back to the pork... brought both racks topside....

Great Tasting Baby Backs!
I still prefer spare ribs, but found these Farmland BB Ribs at Piggly Wiggly for only $3.29lb. Had to buy'em!

Wow Jim those are great looking ribs! Like the sides too, along with the sausage great cook. Is that wood blocks holding up the upper grill, if so don't they get hot enough to put out some smoke?

Looks freakin fantastic!! Wish I had that plate now!! Jim have you tried the Bbq 3001 yet? I have a buddy stoping by Penzys and he is going to pick some up to try...I have the 3000 and it's pretty decent!
