I took a couple rack of spares and trimmed them St Louis style. I put the two rack of ribs on top and the trimmings on bottom for use in peas and greens.
...in addition to a few chunks of apple, I threw some oak cubes that were bourbon soaked and added to the secondary of my Bourbon Barrel Porter for a few weeks. It's in the keg now so I threw these on the fire.
there's some peas under the onion, meat and other seasonings somewhere
and they went on bottom
once the ribs were probe tender, I replaced them with a pot of greens with some of the trimmings in them
and there ya go
served with a slice of SWMBO's corn bread
