Red Beans with Rice and Sausage

I really enjoy cooking beans on the grill this time of year. Here is my offering using Small Red Beans. Soaked one pound of beans for 8 hours.

Got most of my ingredients together and prepped. Here's a funny side note. Here's my tray out at the grilling area. You'll see two yellow cups containing some of the dry spice. Well, there was five of those cups when I hoisted the tray and headed outside. Pretty breezy day but not too bad. Started to assemble the cook and realized three of my cups were missing. Glanced around by the grill and didn't see anything. Went back in the house and looked everywhere, cupboard, fridge, counter everywhere. Enlisted the help of my wife and she immediately headed outside. I mentioned I had just thoroughly looked everywhere out there, but she headed out anyway. Pretty soon her voice rang out, "got 'em! Feeling humble I went out and the wind had whisked them off my tray and they'd nestled nicely down in the ground cover. Upside down of course. Refilled and finally got started.

The aforementioned tray. The sausage is Andouille.

Got the sausage browned in a little oil. Removed when done.

Softened up a green bell pepper, celery, yellow onion and some garlic.

Introduced the spices.

6 cups water and the beans. Brought to boil, reduced heat by half and let roll for one hour.

Removed lid and set aside. Cooked beans another half hour, stirring and mashing beans against side of pot.

Returned meat and some chopped parsley.

Bowled with some long grain white rice and sliced scallions.

Beans were absolutely outstanding. Creamy texture and wonderful flavor, subtle heat. May jack the cayenne next time. Great winter meal. My wife loved them. One of her favorites. Thanks for looking everyone. Hope you have a great, WARM, weekend.
 
Both my girls were spying while I was looking at this and they both just said I have to make. You can't get much higher praise then that in my book!!! I laughed about your yellow cups! So what was in those yellow cups anyways?!?!
 
Wow, Cliff, that looks just fantastic! A perfect winter meal, not surprised that your wife enjoyed it! Oh, and thanks for the laugh with your disappearing spice cups! :)

that's my kind of meal! I use my dutch oven outside quite a bit on a kerosene burner - need to get into the swing of using wood power
 
Great looking cook Cliff, really like the idea of that combination. Think I'll see what I can dream up and give that a try, if the wind every quits blowing up here.

Super good looking cook there. Love the pics. I’m sure it tasted as good as it looks
 
Fantastic looking meal, Cliff! Beautiful pics as always. I could almost smell it. I started drooling by the time I had scrolled to the pic of adding back the sausage.
 
Cliff you got this one just right as rain. Living in east and Central Texas this was a favorite served as a side with blacken red snapper or chicken. I love the flavors of the smooth beans and the rice are so good,as you said a fall,winter staple.
 
Looks excellent, Cliff! Glad you found your spice cups. Isn't it always the case that as soon as you swear something is 'unfindable', the wife comes along and locates it in under 5 seconds?
