Pork-alo meatloaf

Hi gang: that's pork (about a half lb.) mixed in with the full pound ground buffalo. Most of the ingredients



I sauteed the onion, pepper, 'shroom and garlic before adding to the mix. I also finely diced that salami 'puck' when adding it. Mixed, shaped and slapped



and onto the Performer, along with some taters and re-heating beans from the weekend. Split baskets, running around 325*, for about an hour






and dished up!

Brian, great idea combining the pork and buffalo! Bob Correll's pork and buffalo combo would definitely freak out the tourists in Yellowstone.
A buffalo is a critter that you don't really want to agitate. And a pi**ed off pig, you don't want to mess with either, but put em both together and
get it mad, stand back.
