A while back, I ordered 8 racks of spares from Creekstone Farms when their Duroc pork products were on sale. I took this rack out of the freezer and started thawing it a few days ago. I smoked these on the Performer and overall thought this was a pretty successful rib cook. Thanks for stopping by!
Photos of the uncooked ribs, plus action shots. This was my first time using Oakridge BBQ "Secret Weapon" rub and I ended up liking it a lot...good stuff. The fuel of choice was Rockwood lump charcoal with a few chunks of pecan wood for smoke.
Here are the plated pictures. I was happy with how the bark developed over the course of the cook, so I decided to serve the spares without sauce.
