New York Steak that is. My wife and I had our anniversary this week and we decided to splurge on a couple of Costco's New York Steaks. Sided them up with Potatoes au Gratin and an acorn squash. Made for a very tasty meal.
These guys were Prime, 2.17 pounds total weight between the two. Seasoned with salt and pepper only and let them sit uncovered in the fridge for a couple of hours.
Earlier in the day I'd put together the Potatoes au Gratin. Used my little two quart Lodge Dutch Oven.
After the potatoes I halved an acorn squash and placed a spoonful of a stuffing I made from brown sugar, softened butter, chopped walnuts and some nutmeg.
Foiled the DO for the first 20 minutes.
Then cooked an additional 40 minutes uncovered.
Got the New Yorks going over the Vortex.
This was truely an amazing crust on the steaks.
About a cup of sharp cheddar on for the last 4 or 5 minutes. Tried to fill with too many potatoes and it got a little messy.
