Midnight brisket

Saturday evening I got a wild hair to do a Midnight brisket. I slept most of the day since I worked overnight; so I knew I would be up most of the night. Costco was closed already; so I picked up an 11lb Choice packer from Sam's. I used Harry Soo's Texas brisket recipe.

Rubbed and allowed to sit in the fridge for a couple of hours.





Drink of the night




Fired up the Weber around 2330. Took awhile to start blowing clean smoke, but I got the brisket on around 0030. Got it steady at 225 and went to bed around 0200. I wrapped in pink Butcher's paper around 1030 when it was at 170 internal and the bark was nice. Finally pulled at 1300 when it felt right and read 202 on the Maverick. Let it rest unrapped until it was around 175 and then rewrapped and put it in an ice chest.

It was delicious and my inlaws loved it. It was kind of a Thank You for giving me the WSM as Christmas present a couple of years ago. No plating pictures because we were ready to eat! Served with Bush's grilling beans and Slaplicious Coleslaw.

WOW!!! That is one awesome brisket you did. It looks so yummy and the sides sound spot on for your brisket.
 
Looks great JPowers! Going to do my first brisket on a new 22.5 WSM this weekend. I was worried, going from an offset stick burner to a WSM...but, I've been amazed at how well the WSM smokes meat, and how easy it is to use. Have practiced with a pork shoulder and a pork butt, and they were both great! So, now comes the real test. Plan on putting it on about 10:00pm Friday night and going to bed. Sure couldn't do that with a stick burner.
