Not only since I've posted a cook here, but since I've done a butt. I'm still reading on a regular basis and getting inspiration from all the great chefs here. Anyway, happy weekend. With any luck, this will be on the table tonight.
Not only had it been a while since I'd done a butt, but this was my first no water, high(ish) heat butt. Temps probably averaged 275. Anyway, here's a platter fulla pork and my fancy plated pic with gourmet sides.
