I got my father's day gift early this week. My wife and kids got me meat from wild fork foods. They got me a prime Tri Tip, a prime Picanha, and some choice Flacken Style Beef Short Ribs. So for the actual day that the gift was give for I had to go for the Tri Tip (this is the first prime Tri Tip I ever had).
Got a salt brine on it after the trim and into the frig.
Then I turned to prep some kettle cheese potatoes.
Bacon.
Made a bases, sliced the potatoes, cheese, and the bacon. My daughter made the (as she titles it) potato lasagna!
Got the kettle going and after the potatoes having a 15 minute head start the meats went on.
The Tri Tip is on with chicken for tonight and the other chicken is for tomorrow's Homemade ramen noodles.
Tri Tip pulled at 110 to wait to get a good sear.
Potatoes done.
The little black egg got the call as the searing station since the kettle was carrying a full load.
Tri Tip over the fire.
And done.
Got to do something to handle the killer wait time before I cut the Tri Tip so I got some sugar snap peas onto the kettle.
The first cut...magic!!!
More cuts.
And the plate.
Finished with some maple cream filled truffles that my daughter made. They were the best part of the meal.
