Well folks I did it. BBQ for 60+ people in my backyard. It was a great party and the food was great. it was a challenge but it was worth it. 4 briskets 4 pork butts and over 100 chicken drumsticks! The plan was to eat at 6 pm so I got started at 2 am. Get the charcoal ready, trim and season meat, watch temps and a few cups of coffee. The biggest challenge was getting the temp up on the WSM22.5 with 4 briskets inside, 2 briskets on each level. The pork butts were in 2 kettles. They were all wrapped, finished in the stove then a couple hours in the cooler/faux Cambro. Smiles all around.
