Flat Iron Steak

Hi All,

My butcher recommended flat iron steak as having great flavor and being pretty tender. Not ever having cooked that cut of meat I was pretty skeptical when I opened the cryovac but she was right, great flavor and tenderness. Marinated the steak for a couple of hours before cooking.

The makings of a butter sauce for the steak: 1 stick of butter with scallions, roasted red peppers, garlic powder and pepper:

Fresh asparagus and corn on the grill first:

It looks like you did this flat iron up perfectly Jose. I see them in restaurants, but for some reason never in the stores around here.
If I see one I will try to do it up as well as yours.
 
Very nice!!! I really like this cut for the price but just like chuck eyes they seem to be hard to find in my area.
