Enchiladas on a Cold and Windy Day

Cold and very windy, not a good day to grill, but a perfect day to make a few trays of enchiladas.
So I cooked up a whole chicken on the kettle gasser
The neat thing about the kettle gasser is set it and forget it when cooking whole chickens. One hour ten minutes and it’s done, perfectly, I love it. I’ve cooked about ten chickens on that kettle and start it and walkaway no babysitting needed, nice when it’s ugly outside.
We did one of our chicken enchiladas and a tray of a new enchilada recipe Barb found, we used leftover pork loin for this one. It uses a soup and sour cream base with refried beans (Tony’s of course). Also a 50/50 tray of each for last night’s dinner.
Side was my version of Tony’s rice.
The new recipe came out great and is a keeper along with our chicken one.

Those are some fine looking enchiladas you made.
I'd like two for breakfast with two fried eggs on top. Oh.... and some of that rice, please.
