Dutch Oven Braised Beef Short Ribd, Sides and Bonus

I've been wanting to do a Dutch Oven cook for a while now, but with the fire conditions up here, didn't want to do anything with the charcoal outside the kettle. Well, we got a very cool day yesterday and even a little light rain. I jumped on the opportunity. These are braised beef short ribs, done in my 12 inch Dutch Oven. To go along with them I did some twice baked potatoes and two beautiful large artichokes. I'll get started. The Bonus will be towards the end as I don't want anyone bailing early.

Got most of the ingredients together for the braised ribs. Not shown are 3 lbs. of beef short ribs.



Roasted two large Russets for an hour on my JJ.



Got a little onion and mushrooms going for the potato stuffing.



Potatoes all stuffed.



Artichokes all trimmed and loaded with garlic. Will add a little oil before wrapping in foil.



Getting ready for the fun part.



Got the short ribs all seasoned with K Salt and Pepper.



Got some bacon going in the Dutch Oven. I'm not using the bacon on this cook, but like the bacon grease to brown the ribs in.



Browning the ribs on all sides. About half way done.



Got the saute going on the onions, carrots, celery and garlic in the bacon grease.

OK. Here we go again.

After the veggies are all rendered down, I added a small can of tomato paste and let it get funky too.



Lastly added the beef broth, the bottle of Cabernet Sauvignon and the spices. Put lid on oven and moved off Smoke onto my fire bricks and camp table. Cooked for two hours.



OK, this is a good time for the bonus. I've made several references to the fires going on. We've had a constant stream of bombers going over the house. Went up to the airport the other day and got a few pictures of the action. This plane is one of the smaller ones. There are some four engine props too. Also a 737 Jet but haven't see that one yet this year.

This next shot was right over the house last evening. Getting dark so mostly a silhouette shot of another Chinook. This shot is for Dwain.



OK. Back to work. Here is my set up for Dutch Oven Cooking.



Got the artichokes on for about an hour, in foil.



Ribs are done. Not shown, I made a nice sauce out of the brazing liquid in the blender after draining off the oil,



Potatoes are done.



Plated and ready to eat.



This was a really fun cook. That sauce on the ribs was delicious. Hope you all having a good hump day. Thanks again for looking.

That's an amazing cook, way to complicated to duplicate, but I'd be happy to drop by and eat some the next time you cook it :)

Remeber 2008? I was there when the Bear Mtn fire was going, it was pretty cool to watch this bird come and go *YIKES*

Great looking Meal Cliff! I'd like a couple plates please!!!

I used to live a few miles from one our airports and we were directly West of the East West runway. There's a fleet of bombers there. When the big guys would take off they'd fly right over the top of our house. Fully loaded they'd be groaning going by. Could count the rivets in the fuselage! Was quite the sight to watch all day long!
 
Wow that looks fantastic. Cool pics of the slurry bombers going over your house. Hope that they get the fires out soon!

I'm guessing the Giants are winning tonight cuz you sent them some ribs? Keep them coming! :)
 
Great looking ribs and sides, I really like using my Dutch oven! Our performer is working overtime now that the charcoal restrictions have been lifted. Looks like we're going to get some more rain later this week hopefully it will drift up your way.
