Crater Lake Rye Whiskey Chipotle Pecan Pie

A while back I received a care package from Texas. In there was pecans and chipotles. I knew o had to use them to create an epic desert.

1 cup light corn syrup
3 eggs
1 cup brown sugar
4 tablespoons butter, melted and allowed to turn golden brown
1/2 teaspoon vanilla
2 tablespoons of bourbon
1/4 teaspoon of chipotle powder, more or less to taste
1/3 teaspoon of Kosher salt
2 cups chopped pecans
1 (9-inch deep dish or 10-inch)) unbaked pie crust

Preheat the oven to 350F.

Toast the pecans for a about 5 minutes in the oven being careful not to scorch them; set aside.

Whisk the eggs until well blended; add the corn syrup and melted butter.

Add the sugar, vanilla, bourbon, chipotle, and salt.

Whisk until smooth.

Stir in the pecans.

Pour into the crust.

Bake for 1 hour at 350F. The middle of the pie will still jiggle slightly.

Chill before serving.

Crust

2 cups all-purpose flour, sifted
1 teaspoon salt
2/3 cup butter or 2/3 cup shortening or 2/3 cups Schmaltz
5 -7 tablespoons cold water

Put flour into a mixing bowl with the butter.

Using a pastry cutter, cut the butter (or shortening or schmaltz) into the flour.

Add salt and water (1 tablespoon at a time)

Mix until dough is formed.

Roll out on flat surface.

Bake at 375 degrees until brown.

Prick crust line with parchment and fill with dry beans for non filled baked pies.

This little pull string chopper works great for chopping nuts.

I toasted the pecans on the stove top instead of in the oven.

Nice. I'm passing this recipe on to my head baker. Will have to sub the Crater Lake rye with some Alberta Premium.

Thank you! The whiskey and the chipotle really take this up a notch. Next time I am going to add a bit more of each even though the wife thought both levels were fine.

I'd be careful with this one! There were four of us last night and there aren't leftovers!!!
 
Great looking pecan pie Case. Thanks for the recipe. i'm giving this a shot on my smoker when we get back. I see you're still using your string trimmer. I bought one last year at your recommendation and love it. So does my wife.

Yep the pull string food processor is great. No need for a Quisenart!
 
That pie had to have been good. Will have to try the recipe. However (& being rather biased towards rye whiskey), the rye was probably better.
 
And I thought the Upside-down Blueberry Polenta cake was good, this Pecan pie looks off the charts.

Yeah the shots of Rye were almost as tasty as the pie!

The blueberry polenta cake is a close second to this pie!
 
OK, this is too much!
I have just finished a pulled pork sandwich and want a big slab offer roast and a slice of the pie with a shot and cup of coffee! I get fat just reading things from you Case!
 
Too rich for my blood (sugar, that is). :( I even have problems with my wife's sugar-free version of pecan pie made with Honey Tree's imitation honey.

Looks good, nonetheless, Case! You look healthy enough to eat it. :)
