Last month me and my wife went to her home in Bogota, Colombia for 18 days. Had a great time, beautiful country, great people. Her cousin and mother manned the pit. I stayed out of the way and drank ice cold Poker beer watching. He seasoned the meat with Salt only before putting it on. He said the meat on the sticks would be done in 5 hours. I thought to my self no way, but 4 1/2 hours later it was done. While that meat was cooking, we ate Steaks, Arepas, and Plantains, and more Poker Beer! I have never ate so much Beef at one setting. No fancy thermometers or any high tech gadgets used in these cooks, just experience. The next time I go back I am taking a Weber Kettle as a gift. Weber products are not sold there.
