Chicken Thighs and Hot Italian Sausages

Another cook on the Santa Maria Pit. Seasoned the thighs with Lawry's, black pepper, granulated garlic, white sugar and paprika. Used red oak and almond wood for fuel.

Hot Italians and thighs done.


Warmed up some pizza sauce, and added a slice of Provolone to a bun and toasted on the grill


Topped the sausage with some Italian style Muffuletta olive spread and a side of blue box mac and cheese.
 
I've never seen italian sausages prepared like that... between you and lampe, im wanting to make my own (or find a god deal on a) santa maria grill
 
wood a chimney work you think? placing long ends in using weber cubes?
I always start wood with coal...
i'm gonna do an ALL wood cook on that thing this summer, L♥VE using it!

I used to fill a chimney full of lit charcoal and dump that in the pit and then place my wood on top of that.
