Chicken Spiedini

It's been awhile since I've posted a chicken spiedini cook, so I thought I'd post last night's dinner.

Chicken breast chunks marinated in Italian dressing for 2 hours, then rolled in a mix of Panko crumbs and grated Parmesan cheese.
I go with a ratio of about 2/3 crumbs to 1/3 cheese.
On the grill between two char-baskets of charcoal.

Cooked until almost done.

Then browned up direct, lid up, and tended constantly to prevent burning.

A drizzle of melted butter mixed with pressed garlic, then a squeeze of lemon on top.
Sauteed yellow squash and onions for a side.

A very tasty supper!

This also works great with boneless/skinless thighs.
If using thighs there's no need to cut them up, just bread, roll up, skewer, and grill.

Looks great, Bob. I love making these. And my kids love eating them! (the wife and I do too. ;) )
