My wife is not very fond of lamb, so it is rarely eaten at our house. She's out of town with two of our children, so my oldest and I decided that tonight would be a good night to have some lamb. While I was liberating that salmon from CostCo, a nice rack of lamb jumped into the cart, too.....
I decided on a sous vide preparation mostly because my time for dinner prep was limited. Getting the lamb in a bag with some seasoning, and the water going is super simple, so all I needed after that was 30 minutes to get some coals hot when it was time to eat. Here is the lamb pre-bag with just salt and pepper:
....and, here she is after 2.5 hours in the bag at 130, added some dried thyme (wanted to go simple on this one, really wanted to taste the lamb!):
I did a strong pre-heat on the cast iron grate insert, and here's how the lamb looked after the flip (don't let the flames scare ya!):

My daughter and I enjoyed this meal together out in our newly renovated backyard (pics later), on a splendid evening (finally cooling down!) The lamb was tender, and delicious, making for a simple but special meal for the two of us (she goes off to college in the Fall, so I am relishing any 1:1 time I get with her.)
