A little over a month ago I started a fresh batch of Kraut. I make several batches a year and we were all out, well except for the one jar that I am aging for at least a year before cracking into. It was finally ready last weekend. It actually gets better the longer that it ages, but for now its just getting good.

I have been craving one of my favorite meals. Brats with butter Sauteed apples, onions and kraut. I dug deep into the freezer to retrieve my last pack of homemade brats. Had my sous chef slice the apple and onions and get them sauteing while I tended to the grill. The boys don't care for kraut so I added it to the apples and onions after dishing them up. Bit of good mustard oh yeah!

Ended up with 5 quarts of kraut!

ENJOY!!!!

That looks really good, although I will sit with your boys and politely pass on the kraut. An acquired taste that I haven't quite learned to love in my 41 years.

CaseT;
I was born and raised in Ohio. However, my family origins are from Appalachia (Kentucky). My Mother (Bless her soul) kept a crock of kraut going all of the time. My step dad raised the cabbage in his extensive garden and Mom prepared it and it was GOOD!

That looks downright WONDERFUL!

Thanks for sharing this with us - it sure takes me back...

Talk about coincidence...we decided this morning (before I saw this) that we were going to do Brats and Kraut on the Performer again this evening. Your post only reinforced that:D

Keep on smokin',

Thank you! Give the apples and onions a try! They really go good with Brats, or pork chops too!

Thank you! This is one of my favorites. I also like doing the apples, onions and kraut with pork chops! So good!

Our short growing season doesn't let me grow cabbage successfully. So it s all store bought here.

That looks so delicious Case. Love sauerkraut with many things but especially Brats. Really like the looks of that mustard too. Just returned from a week vacation in Southern Oregon. Wish I'd seen that Portland Mustard while I was up there. Definitely would have picked up a bottle. Nice job and photos.

Thank you Cliff!

Portland Ketchup was their first product and now they are expanding. The Ketchup is the only one the wife and I use. We still make the boys use the Heinz.

Usually I'm not a big fan of plain yellow mustard, but this stuff is great.

You can buy it online.

Count me in on that whole plate of tastiness Case, great looking meal!

Thanks Pat! It's really good! Works well withnpork chops too. When I make it with chops I like to add mashed taters into the mix!

Case,
Kraut is like Kimchi the older the better,
My grand parents made it at home and it was the best, like my wifes kimchi hard to bet.
Like the apple dish may have to try that.
I fact we are having kraut (local Cincinnati made smooth stuff) and smked ring sauage this evening have some Indiana Amish style hot spice mustard from a friend, great styff.
Great cook keep them coming.

Boy does that look good, had lots of kraut when I was growing up in the Midwest. making good kraut is an art form and yours looks really great.

Thank you Kevin!

Yep Kimchi is another favorite to make. I have to order in the fermented shrimp and the spice to make it. That's going to be one of the next projects.

Thanks Rich!

This recipe is super simple and can be added to if wanted. I suggest you give it a try.
