Best enchiladas in recent memory.

Sunday was a day to rest after a Saturday night of fun.

But we need to eat so we decided to do green enchiladas. Started with doing the chicken on the rotisserie.







It was done after an hour or so.



Maribel finished the cook. :)
The enchiladas salsa ingredients,

Sour cream 1/2 cup,5 jalapeno,2 garlic cloves,1/4 bunch cilantro,1/4 onion,1/2 cup of water, a little less than a tbs of salt. Put in blender and mix well.



Make the enchiladas as usual.

Tony my friend, that is a delicious plate of food. You have ruined mexican food for me because nothing ever looks as good as your food!

Tortillas were quickly dipped in hot oil and then in the sauce. Then rolled them up with chicken only and the cheese goes on top. They went into the microwave for 45 second or so to melt the cheese.
