Last Sunday I decided to do some enchiladas for dinner. I used some left over pulled beef I'd frozen a couple of months ago. For my sides I used Tony's recipes for refried beans and rice. I'd done the beans once before but this was my first cook of the rice. It was delicious Tony. Thank you very much. Here's some pic's.
The pulled beef all thawed out.

Chopped up the beef and added some hot chiles

Enchiladas ready. Topped with sauce from scratch, black beans and sharp cheddar.

Got going on the beans. Onion and peppers softening.

Beans about done.

More chopped onions and rice.

Cooked rice over some high heat, constantly stirring for a minute or two.

Moved over to low heat, about 8 briquettes, for about 25 more minutes.

Rice done.

Enchiladas on the grill, indirect.
