we did some grillin' and smokin' since the last time I posted... and here's a few photos of some of it.

'bout 1½ hours of low temps on the WSM with lots of hickory wood for smoke, then into the oven/dehydrator until done.

Purchased about 11½ lbs of pig belly last Friday...

sliced into 4 hunks and vacuumed sealed until we're ready to make more bacon.

Hmmmm.....beef and pork and pig and cow...........can't decide which I would like right now, so I'll settle for a sampler platter of each please!! :D

The bone in cowboys are insanely good looking. Amazing Jerky, impressive how you did it. The other cooks, spectacular as expected. The bacon...WOW!

Did you make the Franks & Brats? (not just cook them) I'm more than impressed!

How you like the Sols? It's my goto when in Playa Car :)

Tony R has a thread going about cooking with wood. You should drop in some of your Santa Maria cooks. That's how I got started cooking with wood :)
 
It all looks delicious Jim. Once again, some fine looking cooking coming out of that Pigvilion. If I was forced to pick a favorite, I'd go with those center cut, bone in, pork chops, Yukons and green beans. Cool jerky rack too.
 
I got 5# of bacon. err I mean Fresh Side in the Ice Box that needs a few more days of curing, then I will do that and some cheese..... Great cook... I need to make some some jerky as well.. hmmmm Mega Cook Time..
 
Well you have been busy! You can just serve all of that up for me buffet style. It is hard to beat a cowboy ribeye but I think your pork chop may have done it. I like the little square pan you cooked the onion bloom in. Is it cast iron or ceramic?
