SYD rub on the ribs and bacon.
Hood therm read in the 250 range for most of the cook.

Back in the spring we lost a fair size limb from our sugar maple and I let it season over the summer, then cut it onto those round pieces in the pic.
It gave a very nice smoke flavor and smell.

After about 2.5 hours I flipped the ribs over and removed the bacon for a snack.

4 hours in I cut the slab in half and applied sauce.

Nice cook Bob, those ribs look outstanding and the bacon...well I'd gladly chow down on that. That sammie is sure different, but of course bacon goes with everything.:rolleyes:
 
Another great cook as per usual Bob. Color is great and I will bet they tasted wonderful. I love PBJ sandwiches but not quite sure about this new version. Will have to think about that one.

we had some folks over yesterday, made a rack of baby backs and spares.
over done both racks :(
 
Those ribs are perfect Bob, and the bacon spot on. Now about that sandwich, I know everything is better with bacon but peanut and apple butter? Have to give it a try, but it does look good.
