I did this cook the night our power went out. I had scratched it earlier and then was finally able to get on the utility website and saw the shut off time was not until midnight. I went for it. Might as well go out doing something you love to do! Szechuan Chicken it is.
Cut up about 1 1/2 lbs. of boneless skinless chicken breasts. Got it in a hot skillet.
Got it nice and browned.
Stir-fried the bell peppers, carrots, green onions and fresh ginger.
Only took a few minutes.
Threw the chicken back in and stirred it up.
Stirred in a mixture of water, soy sauce, sherry, cornstarch sugar and red pepper flakes. Added some cashews that I'd toasted earlier.
Served it up over some nice, steamed white rice.
