    Help!

When I lived out there, Safeway had boston butts. Brisket I had to go to a butcher.

    newbie brisquet question

Brian - are you buying just the flat? Surely you're not paying 3.99/lb for a full packer.

    newbie brisquet question

CAB packers in Nashville for 1.60/lb. I've never seen choice under 1.30/lb in the few years I've been buying them in Nashville. FWIW, I wouldn't cook a select brisket, but since I never have any trouble getting CAB - my decision is much easier. If you have Sams/Costco near you, they should...

Anyone get spoiled by their own food?

Yes, except for when you go to special places in Memphis for ribs, Lex-style in NC, and brisket in Texas... For the most part, BBQ places are terrible.

    PRIMO v. Big Green Egg

Maybe I'm wrong, but wouldn't the heat being in a round element/environment better cook a round pizza as opposed to a round pizza in an oval element/environment? Maybe it doesn't make a difference - that would be nice to hear. I usually cook pizzas that are about 16-18 inches

    PRIMO v. Big Green Egg

Nice input, Larry. Unless a Primo owner says otherwise, I think I'll be good to go with the firebox divider. You've concerned me though with the pizza talk. I was talking about this just a few days ago - wouldn't the round BGE produce a better round pizza? I really intend to cook pizzas...

    PRIMO v. Big Green Egg

My understanding is $700 delivered for a $1300 model. I don't know, but I haven't seen a $1300 Primo - maybe that is some retail or MSRP?!?!? I am going through a good friend of a friend, so I don't have full details. Just $700 for the Primo XL delivered at this point... Larry, do you think...

    PRIMO v. Big Green Egg

Thank y'all so much for the feedback. I am now leaning toward the Primo because of the size issue. I already have a One Touch Platinum and two WSMs (both old ones) and I'd rather buy a ceramic than the bigger WSM. So, I'm thinking the large BGE would be too small for entertaining, while the...

pulled pork...how much $ per lb.?

I usually just ask 20 or 25 dollars per whole butt. A lot of places around here who make worse BBQ sell them for 40-60 per whole butt. I can usually pay for my own plus some party supplies by selling an additional one - so, that suits me.

    PRIMO v. Big Green Egg

Thanks! So, we all contend that the Primo has equal or better quality than the BGE? I've heard that the BGE soudns much more solid and is 1/2 inch thicker - is that just BGE fluffing? Anyone have experience with Primo's customer service?

    PRIMO v. Big Green Egg

Wow, thanks for all of the conversation. A few things - I'm leaning toward the BGE because they're better known and I've heard the overall quality may be better - not to mention, the warranty on the BGE is better. The community might be larger too - I've benefited a lot from having this site...

    PRIMO v. Big Green Egg

Any folks around here have both? Cooked on both? I'm making the plunge one way or the other. I was in the BGE camp, but I've had a great opportunity present itself with the PRIMO. Are the PRIMOs as good? What are the noticeable differences? Quality concerns?

    Best Q in Memphis?

Really depends what kind of Q you're wanting... Pulled pork? Ribs? Game Hens?

    Aging Beef Tenderloin?

Thanks! Do I really need the container on top or can I just throw a towel over it? Should I wrap the towel?

    Aging Beef Tenderloin?

So, how many days should I age? Any tips? Just remove it from the package and let it sit around? Then do all of the trimming? Is a week too long for aging a whole beef tenderloin?

    Rib Roast!!

Wow, that is a great deal for prime - if I knew I could find it for that price, I'd be all over it. We have choice for 5.99 this week at Publix.

    Ribeye/Prime Rib Question

Thanks Kevin! I actually froze the large end and I'm going back today for a short end. I plan to dry age it for a week, then cook it on New Years Eve for dinner. Hopefully it'll turn out great! The short end has more internal fat, right? Are the short bones large enough to keep it standing?

    Ribeye/Prime Rib Question

Crap, I just bought two of the long ends I knew short end, but remember reading "long bones". Oh well, if I dry age for a week, it should still be good?
  19. J

    Ribeye/Prime Rib Question

Alright folks, I went to buy one of these today. The "short end" has short bones and the long end has long bones, according to the folks I spoke with - do I want long bones or short bones?

    Briskets at Sams

Sams in the Nashville area carry flats and full packers. CAB Packers are 1.67 lb, flats are of course higher... Sorry to hear y'all can't get the same in other areas.
