    First use of my Auber....

Received an Auber for Christmas. Was doing a rib cook yesterday so I figured I'd try it out. Man what a great little tool. Kept the temp around my target give or take a few degrees because of heavy winds. -Minion Method -Claypot Base -Brought temp up to about 10 degrees short of target like...

    Holding pork butt overnight...

Plan on doing a few butts tomorrow. They'll probably be done about 9-11pm tomorrow night. Later than I'm going to feel like pulling them. We plan on pulling them on Sunday morning/early afternoon. So what is the best way to store them overnight? Tinfoil, towels, and cooler method? Think...

    Temp probe holder

Good idea!!! After I lost my clip I started using a small potato or a small balled up piece of tinfoil to stick the probe through. Now I just stick my probe about 3/4 way into one of the Guru eyelets and it sits just below the grate, away from the food, and not touching the grate.

    Clay Disc vs. Water Bowl

I did about 4-5 cooks with the water pan w/o any foil. Man what a PIA it was to clean up the mess after I was done. I picked up a 14" clay saucer from Home Depot a few weeks ago and have done 2-3 smokes using it. I foiled it and set it in the water bowl. I will never go back to water again...

    Sterno for lighting chimney?

Another vote for starter cubes. I have stocked up on enough of them to last me a few years.

    The New 18.5

Get him a Maverick ET-73 while you are at it . Maybe some guru eyelets too. Rib rack or two. Charcoal chimney. Welders Gloves. Lots of heavy duty foil. You'll be the best son in law in the world.

    Remember to always be safe!

I have an old really small cheap grill that I set my chimney on to light it. It is about the size of a Weber Smokey Joe. Perfect for lighting chimneys safely. It almost was thrown away though. I used to take two bricks, set a stainless steel bucket on them, and then put a grate on that to...

Clay saucer in newer WSM 18 (721001)

The 14" I got from Home Depot sits on top of the water bowl of my 18" WSM perfectly. I can imagine the 12'5" would probably sit a lot lower in the bowl. Not sure that'll make any difference when it comes to cooking.

Clay saucer in newer WSM 18 (721001)

For those using the clay saucer method, are you doing the minion method? I am going to try the clay saucer for my first time this weekend while doing some ribs. I have 5+ smokes under my belt using the water pan and have been able to maintain temps really well. I'm guessing I will want to cut...

WSM is amazing! - 9 racks

Awesome pics!!!! I have a large BBQ planned for this weekend with about 6-7 racks of ribs on the menu. I picked up the rib rack you are using since it looks like it'll serve us well. I checked out the link to your blog and was wondering where you got these gloves: Thanks

    water vs. no water

I stopped at Home Depot today and picked up a 14" clay saucer. Plan on using it for my next cook since I don't like having to deal with the water pan and cleanup.

    Weber starter cubes

I swear by these starter cubes. I picked up 3 boxes at Home Depot a few weeks ago. Before that I just ordered some offline.

You know you love BBQ'n when....

...you are in your office, you look at one of these, and go hmmmmmm...I wonder if I could use that on my WSM..

Best rib rack for 18" WSM?

I have a kenmore brand rib rack that will hold 4 half racks of baby backs pretty well. But i'm looking for something a little better. Maybe holds more or full racks w/o breaking. What does everyone suggest?

Do I really need a WSM?

Do you NEED one? Probably not. Unless your wife/GF is asking that question...then the answer is yes. And you figure out an excuse why. You can never have too many toys. And a WSM is a great toy to have if you enjoy BBQ.

New owner 18.5 wsm with a quick question

I agree with Phil. I always fill the ring when I do baby backs. Usually mix a few pieces of wood in there too. I then fire up about 20+ coals in a chimney and throw them on top with a few more pieces of wood when they are white. Put some water in the bowl, assemble everything, and throw the...
