First time smoking a rib roast

Cleaning out the freezer! I follow Malcolm Reed on his channel, How to BBQ Right and followed his recipes. He seems like a really great guy and has a ton of info for people who like BBQ, can’t recommend him enough. Onto the WSM at 275 until it was supposed to hit 129... My one major mistake...

Help with my outdoor BBQ area

I have a little shed that I want to build a little BBQ / grill area next to and put all my toys in one place to make life easier. The patio I want will have to be 16' long but the width is up to me. I want to put a stainless prep table out there along with the following: A 22" WSM, a genesis...

    Smoking Fish?

Harry Soo says one thing, others say the opposite. Can I smoke fish in my WSM 22 and not have it make everything else smell like fish later? Don't want to ruin my baby. Tom

Getting the marinade into the chicken?

I have made the Cornell Chicken recipe from Cook's Country that is also posted on here and it has turned out delicious but I have one problem with the recipe. I have made the recipe with 4 lb. birds and 8 lb. birds but in both cases, the marinade flavor only really penetrates about 1/2" into...

Maryland > Baltimore: Chap's Pit Beef

http://www.chapspitbeef.com/ Went here today after a somewhat disappointing visit to Andy Nelson's in Cockeysville. This place is a run down shack on the side of the highway in the bad part of town (not crime but auto wrecking yards, heavy industry kinda place). It is right in front of a...

    Need some "Redneck" recipes

We host a party every other week during the summer for the neighbors and to make it more original, I introduced "themes" for each one. Last year I was on here looking for retro ideas, this time it's "Redneck" recipes. I have the Redneck Caviar and Redneck Sushi but does anyone have some other...

    Can you brine brisket?

Watched Pitmasters 3 and Aaron Frnaklin denies any injection for his brisket which makes sense if you are doing 80 a day but maybe he is brining them? The real reason I ask is that people say to brine chicken, maybe pork but not beef. They also say that leaving chicken in oil / vinegar for too...

Are we all doing it wrong?

I picked up a copy of Cook's Illustrated's "All Time Best Grilling Recipes" last night because I usually consider them to be a great resource on most culinary matters and have had countless delicious meals based on their recipes. Needless to say, I was eager to see their take on grilling and...

    Retro Dish Ideas?

The theme for a party is "Retro" where you make a dish that was all the rage in the 50's - 80's. Does anyone have a BBQ main course that would fit the bill? Thanks, Tom

    Meat slicer recommendations?

I have read all the posts on the subject and I am leaning towards a chef's choice model. I am going to use it probably 6 times a time for pit beef whichs needs to be very thin in order to not be too tough. Any first hand experience since those posts? Thanks, Tom

    Flat top grill?

Has anyone devised a nice way to raise the grate on a 22" to do things like skewers or yakitori? With the grate sitting down inside the kettle, the skewers don't sit flat and cook evenly.

Best way to get ribs on and off the smoker?

I smoked up 4 slabs of ribs yesterday and all the trimmings as well and although things went fairly well, I wanted to see if anyone had some suggestions. #1) If you foil ribs (family likes them falling off the bone) can you use a rib rack? When I was putting the ribs back on to firm up the...

A big thank you to this board!

My first attempt at pulled pork was a huge success and I owe a huge thank you to this board. I started with 2 butts, one at 8.2 lbs. and the other at 10.4 lbs. I injected and rubbed according to the Chris Lilly directions. Put the butts on the smoker at 7 in the morning at 275 grill temp...

    Height under lid of 26.75"?

Is there more height under the lid of a 26" grill than the 22"? I'm torn between a platinum 22" and a 26" but if the 26" can do beer can chicken without a lot of trouble, it might be the winner.

Did my first ATC cook yesterday, now some questions.

First my set up: DigiQ DX with a 10 cfm fan on a WSM 22. I was attempting to do a high heat (350 degree) cook of 2 briskets at the same time. I used 20# of Kingford blue and pulled 40 coals for the chimney starter. Foiled but empty water pan. One brisket was 10 lbs. and the other 13 lbs, so...

Looking for a mild pulled pork recipe

Half of the extended family is under 5 years old so I'm looking for a rub and or sauce for pulled pork that is mild but not bland. Does such a thing exist? Thanks Tom

High heat brisket taking 6 hours?

I am trying my first brisket today in my new 22" WSM. I cut my teeth on ABT's last week and some smoked potatoes and drum sticks this week. I used the Minion start with 40 pieces Kingsford on top of remaining 18 lbs of the same and about 5 chunks of smokewood and immediately put on a 11.3 lb...

    ET-732 discontinued?

Amazon no longer carries it and it's not even mentioned on the Maverick website. Has it been discontinued or am I missing something? I know it's available elsewhere but I was just curious. Tom
