    Friday lunch menu

    My boss asked me to cook lunch for the crew on friday. Two 8 pound butts and 4 racks of these center cut spares. Here's the catch, i pull the all nighter cooking and get a paid day off on friday.     I will be doing 2 8 pound butts tonight - should i inject and rub when i get home around 4 pm or wait untill around 10 pm right before i put them on? Does injecting too early run the risk of the liquid running out?
