    MAJOR Cooking Slump & Hiatus

Thanks for the support guys, I am going to get back into it hopefully. I enjoyed it while I was heavily into it and especially enjoyed discussing stuff with the community. A lot of great people here. Maybe I did get into it too hot and heavy though and needed a break when I burnt out. I need to...

    MAJOR Cooking Slump & Hiatus

Have any of you guys got in a cooking slump? I literally haven't grilled or cooked really in over 9 months I'd say. I just can't get the motivation. I don't know if it's the long hours I'm putting in or what, but I just ain't got it anymore. I haven't been active for even longer than that, but...

    Pre-cooking Hamburgers

Would the cooling period create quite a lot of bacteria in the middle of the burger? I know that I love love love a medium rare burger, but I always use some really fresh ground beef that either I grind myself, or ground beef from the one place I'll buy it already done up (Son's in Jasper, AL)...

    Choice rib eyes

Whew Lord, I paid $12.99 a pound for prime ribeyes at Costco last time I went. But those being that Texas brand of steak probably drives the price up a good bit. Great looking cook, meat looks juicy and cooked just right.

    Chicken Question?

Ever tried a dry brine? I love doing that and I find that the meat doesn't get that "hammy" texture and the skin also stays crispier without having the let it dry out uncovered in the fridge. I just rub the meat down with kosher salt and leave it uncovered in the fridge for 10-12 hours and then...

How to Build a Better Burger

Sounds to me like grilled sandwiches and not a burger..... Burgers use beef and beef alone in my book. ;)

    Select Bone In Rib Eye

I have always had bad bad luck with Select beef. I stay away from it even if it is cheap just because the meal turns out very, very mediocre and I am cooking them properly I feel. The side dishes end up being the mains in those meals.

    Binchotan Japanese Charcoal

I've been making a good bit of my own charcoal surprising I think. I place several smoking chunks of hickory on my grill when I'm doing burgers and all of them turn to what appears to be charcoal since they are only partially combusted. I throw them back in my chimney for a second lighting and...

    Burner Stoppage and Cleaning

Sure did! I got them in there and the grill is burning like a dream now. Super hot just like it was way back when and no soot from the burners. I am stoked that Weber sent them to me for free. What a great company. Only reassures all of us I guess of why we love them so much. BTW, sorry it...

Steelhead on my 28 Year Old

Great looking steelhead and congrats on the anniversary! Great to see that people actually stay married. My generation seems to not think like that, so I guess I'll just stay away from marriage all together! Love that grill too. Bill I love that brick wall in your kitchen. I am starting to...

    Favorite Store Bought Sauce

Gotta go with Sweet Baby Rays and also Big Bob Gibson's White Sauce for all chicken cookery on the grill or smoker. That said, the Kraft Honey and Roasted Garlic is pretty darn good for a cheap and usually pretty inferior BBQ sauce brand. I like it a lot for a basting sauce and also for just...

    Appetizer suggestions?

Yeah, every time I have done a heavy appetizer everyone always gets full on it and doesn't enjoy the barbecue as much. My family are pretty big eaters at that and can put away a good bit of food, even the pretty women in my life! That said, I love love love pig shots. Take a Kielbasa and cut...

    Bourbon wood chips

Walmart sells them nationwide I believe, and yes, they really do smell like bourbon when they are in the bag. It is actually quite strong from the bags I've bought, and the flavor that they give is really really good. Here is a link to the Walmart site to see if they are in stock local to you -...

    Which one?

I like the blue too, it is all I use in my mini for smoking. I go with Royal Oak or Publix brand lump charcoal for all my grilling for the higher heat, but with a low and slow long smoke session the briquettes are nice and really consistent. The Competition briquettes are made for higher heat I...

Huge taste difference between heritage pork breeds and grocery store pork

I do think you need to reconsider your viewpoint on frozen meats for sure. I freeze probably 80% of the meat I get because I like to have it in stock at the house and not have to go grocery shopping very often. Also buy up whenever stuff is on sale too or when I get to go to ethnic markets and...
