    Saying Goodbye!

I am sorry to say that after the worst 7 months of my life, I am trashing the 57cm WSM that was purchased in May 2014!! It has been out of round on both the centre section and lid since it was 2 weeks old! Weber tell me that they are not going to warranty it as "it is impossible to go out of...

Buttermilk brine for chicken - avoid burning?

Ditto Marc. No trouble at all using buttermilk brine. Tend to have more trouble using brines without buttermilk!

    Temperature probes?

The lid thermometers ARE accurate at telling you the temperature of where they are situated! I carried out calibration tests with all my thermometers including the dial one supplied with my WSM, and ALL read correct temps for 100C/212F in the boiling water test. I have also put a digital probe...

    CyberQ Wifi -- Current thoughts?

That would be the only way it would work with Android via a browser (not had chance to try any apps with my friends one yet). You could also use a MiFi router or a normal router on a comp if you wanted to, but that is more equipment to carry around. Easiest way around the issue at a comp would...

Using the WSM in a Screened-In Enclosure

I use mine under a "lean to". Enclosed two sides (neighbours fence and the house itself), and has corrugated perspex for the roof. No problems at all, in fact it performs better when the weather is poor because it is less affected by it.

    UK Charcoal

The manual also states that lumpwood should not be used either, but I know plenty of people (myself included ) that use lumpwood with no problems at all - & Weber sell lumpwood in the UK as well! From what I can make out, Heat Beads burn no differently to Weber's own Premium Briquettes!!! If...

Difference in dome and vent temp

In that situation, given that all the probes are calibrated, I would go with the one that you feel is the correct one!! lol

First attempt at a large brisket in the UK!

TBH you will not go too far wrong with this guide - http://virtualweberbullet.com/brisket2.html Ribs I would follow allow 5 hours as Ken says.

    How long is safe?

I disposed of it anyway as it didn't smell good at all & the meat felt slimy event though it had been kept at <40F in the fridge in the brine.

    Switching lids

I don't know if the US models are different from the UK ones, but the lids off the WSM do not fit the Compact kettles or vice versa. It is because the lid on the WSM sits inside the lip of the centre section, where as the kettle lids fit over the lip of the base. The pizza oven accessory does...

    Dome gauge wayyyyy off.

Have you removed the dial thermometer & done the boiling water test with it? It does sound like a virtually identical scenario that I was having until today's experiment proved my initial thoughts wrong. One option that I might try for the higher temperatures is to put the deep fat frier on and...

    How long is safe?

I intended to cook the chicken Sunday night, but on taking it out of the fridge, it was still partially frozen, so decided to brine it overnight as the final part of the defrosting process to cook Monday afternoon instead. With phone ringing and having to run about yesterday I forgot all about...

    How long is safe?

Just confirmed what my original thoughts were in that best to throw away. Hopefully I won't forget about it next time!!!

    How long is safe?

That is what is concerning me. It could be from the bones where I have trimmed the thighs down, but I would rather be safe than sorry!

    Dome gauge wayyyyy off.

I have just done a similar experiment. I had been taking temps through the lid exhaust and found almost 50F difference between the dial and probe. Thinking that the dial is out of calibration as you keep reading about them online, I went on the probe temp. Just fired up the WSM and got it to...
