    White Pepper

I make up a "pepper mix" using equal parts of white, red, and black peppers and Old Bay Seasoning. I keep it on the table and I keep some at work.It gives things a nice little kick and I use it on about everything....try it with additional Old Bay on warm buttered popcorn....along with you...

    Holding a smoked turkey

Scotty & Kevin...Thank you both so much. Yes the more that I thought about it, I figured that plastic wrap is the way to go. I'm now at the 2 hour mark, so the replys are very timely. Thanks for the reassurance. Wishing you and everyone a very Merry and Safe Christmas and New Year Holiday...

    Holding a smoked turkey

How long do you think that it is safe to hold a properly chilled smoked turkey in the refrigerator? I am planing on cooking the birds (2)Friday morning and 1 will not be eaten until Monday noon; about 3 full days. Is this too long? I usually chill, then place inside an oven bag to hold, but...

    Butterflied bird help

Thank you Chris! I guess that I was so focused on doing a turkey that they could take home that night that I wasn't considering doing them any other way. I like the idea of freezing in pieces and reheating too, I'll suggest that to the winners. This is my first offering for a silent auction so...

    Butterflied bird help

I am going to butterfly-smoke 2 turkeys for a fund raiser "silent auction" for next weekend. I want to smoke the birds ahead of time, quick chill and then freeze them to take to the event. My idea is to put the frozen turkeys into oven bags, and provide instructions for thawing, and either...

    3rd grate

Hi Ryan.....Sorry, but I am not very techno savey (pictures), but I can tell you! First, refer to the Modification section; Increasing cooking capacity...I used: - (4) pieces of 1/4" all-thread that I cut from a long piece to about 4" - 4.5" [you could use bolts] - (16) fender washers - 2...

Ole Diz ended each broadcast...."here's the 'ol lefthander rounding third and headen' for home..." Man...those were the days!!!

    3rd grate

Ryan....Just FYI, I also added an extra rack on the top, for a total of 4. The 4th rack is a smaller one that fits inside the lid. I use the 4 rack setup when doing brats, thighs & drumsticks, or any number of thinner cuts of meat. Also fatties and ABT's. I don't use that set-up often, but it...

How'd you get into barbecue? *****

Great topic...A guy a work was smoking all kinds of things on an old electric smoker that his father had owned. He would smoke something, mostly wild game or beef roasts, and would always give me a taste. Not long after that, I was laid off of work (for 3 years) and started searching the net for...

Royal Oak Chef’s Select Hardwood Briquettes

Barret....I believe that the Gordon Food Service (GFS) stores also sell Royal Oak in their GFS labled briquetts (red bag) and hardwood lump (black bag). These are also the larger sized "food service" briqs and are 20 lb. bags. This info may not be up to date as it has been about a year and a...

Need help with dried out pork

C.W., don't let this one time stop you from doing overnighters. The more you do them, the more second nature it becomes. Pork butts are so forgiving and people that don't "Q" think that you are a Master! [just smile and say "thank you"]. I usually do at least 4 at a time, but the last couple of...

Need help with dried out pork

C.W.....You can add apple juice or even chicken stock (unsalted) to moisten up your PP. Also add a bit of your rub to the finished meat to give it an extrs little WOW. The 270* temps will not hurt a thing. I smoke my butts in the 260* - 280* all of thee time. It just cooks a little faster. I...

    6 shoulders in a 18.5" WSM

Hi Dave, I hope everything with your back gets better soon,!!...FYI....I have done at least 4 - 6 butt cooks on my 18. I set them on the bone side, in a triangle arrangement, held upright with bamboo skewers thru the top corners. The 3 bigger ones (I just eyeball them) go on the top rack. I...

    Overnight cook on the lawn?

TristanH....the 12" x 12" cement "stones" is what I use. I've got 4 and my 18.5 WSM fits easily. You can just pick them up and stack'em in a garage or storage building, so that it doesn't kill the grass. They work great.

Saving coal on shorter burns w/the 22.5"

Another idea would to get some expanded metal, cut it long enough to form your desired circle and the heigth you want and bolt together. There is no impact on the air flow. Check out Ugly Drum Smokers (UDS) for more info. HTH
