Your Signature Dish?

Everyone who grills or BBQ's develops a signature dish or two over time.
Mine are baby backs with a secret sauce, and grilled marinated chicken parts with a secret homebrew marinade
that includes some extra garlic.

Tell us about your top one or two please?
 
Cedar-planked bacon-wrapped grilled meatloaf.

Apple-stuffed, prosciutto-wrapped, Pork Wellington.

When we invite friends over they always want me to make baby back ribs and my shrimp and cheese stuffed bacon wrapped jalapenos so I'm calling those my signature dishes.
 
Wow - I wonder how available cuts of Cape Buffalo are in your area? I would bet that almost anything for beef could be adapted (but it is probably leaner?)
Black Death Ribs with (some sort of exotic African) Sauce...

As for me - My friends and family really seem to like my Tangy Bourbon-Chipotle Sauce over some pulled pork...
 
I'd say the two main ones or turkey on the Performer at Thanksgiving and Brisket anytime. Of course, my BIL says that anytime I use the Performer or the WSM that I should invite them. Of course, free food is always a winner.

Ribs or Polish with Kraut.
Italian beef.
Almond crusted pork loin ( from JOY )
And don't forget chili..:)

Baby backs when we get together with friends, my family loves smash burgers on the mojo! Since I made my vortex, wings have become quite popular as well.
