That's a great looking chicken Enrico. Was the fork just used to pull the skin away from the meat to make it crisper?
Can't wait, that cook is amazing. Simply fantastic EnricoSkin was like paper, really close to success.
Meat was a little mushy.
next time I will move to 300F WITH pizza stone in.
