Excellant I have yet to see onion butter but I bet I can make it. I like simple rub combos they just taste like like less hassle...Liberal dousing and about a thirty minute setting. View attachment 63563
Sometimes I put the vortex on the lower level coal grate. This pairing is incredible for chicken cooking any part of the ol bird. If anyone has any tips or suggestions for variances outside of the straight forward I’d like to hear them…and see.View attachment 63530View attachment 63531
Nope, will not work with Pizza, just burns the crust.I want to try it with pizza. I think it gets hot enough to make a pretty nice Pizza
I don't use the vortex for pizza. I just load the WSK with coal and a couple of chunks of oak. The stone is rasied with fire bricks. Stone and dome temps can be managed between 600 and 800F depending on the dough.I want to try it with pizza. I think it gets hot enough to make a pretty nice Pizza
I’m going for that next time.Sometimes I put the vortex on the lower level coal grate.

I’d bet the medium size would be good. Maybe Marty Owens will see this and respond?OK I am interested.
What size vortex works best with the WSK?

I had a vortex before the WSK so it's a just a normal one.
Mine is too tall to use with the coal grate in the upper position and to have the center gbs grate in place.
This is the one I have.
