Willysito's Refrito con Queso and Ribs

So, sorry I missed so many good cooks the past week or so, was in Belize fishing, drinking and eating with my Son and Brother. Me on the left

Had a hankering for some good ribs. Put together to racks, one rubbed up with Rufus Teague ( which is one of my all time favorites ) and the other with Everglades seasoning which is excellent as well

On the WSM @ 275, foiled with Honey Brown Sugar and Worcestershire, then the last half hour with a light coating of Sticky Fingers Tennessee Whiskey Sauce.

While the ribs were a cooking I made up some Gourmet Cole Slaw

So the Refrito's, diced up red onion in a little EVOO, then a whole Jalapeno sliced up, Pinto Beans mashed up next, then covered with Jack and Cheddar and put on the WSM to melt the cheese.

The CEO told me to remember everything I did as the Ribs were outstanding, especially the Rufus rubbed version

We really enjoyed this one, ice cold Blue Moon with a slice of Orange in it seemed like a perfect match

You never skipped a beat your dinner plate looks amazing.
 
Missed your cooks Bill. Glad you were able to get away though and have some quality time with your family. Super looking ribs and sides!

Where do you get the Rufus Teague rub? Local Stater Bros has the "Touch of Heat" sauce & we love it. Alas.... they don't have any RT rubs.

Believe it or not I first found it at my local Home Depot in the spice / barbecue section. After I first used it went back and bought all they had. When I run out I will go on Amazon off this site and get it. I have bought a lot of competition rubs and made my own versions many times with good results. But, I have never had any better. IMHO
 
Some mighty fine cooks there Bill. Is the seaweed issued down in Belize too? It's really bad north, Playa Car area and such
 
Looks like you had a good time which is great and that dinner...Well you didn't loose any of your cooking skills while you were gone.
 
Bill, that was some awesome food you did and it looks like everyone was having lots of fun. When I was in the travel business I sent a lot of people to Belize. It's a nice area for sure.

Looks like a fantastic trip and as usual, incredible cooking. Refried beans are under appreciated thanks to Old El Paso and the like. Yours look delish! I too am a fan of the RT sauces. Will have to look for the rub.
