Willysito's Frijoles Charros and Carne Asada

Went Tex-Mex today with a recipe for Beans that was outfreakinstanding. Link below. I did not have Chorizzo so used my home made spicy sausage and I added a smoked Ham Hock which he did not use.

Finished after six hours, phenomenal

Outside Skirt Steak, tenderized then in the marinade. I used Chef Merito's spice and let it sit for twenty minutes before putting it in the marinade. Makes a difference. Onions, Cilantro and OJ

Made a thick Salsa to top the Taco's tonight. Started with roasted garlic, Serrano and Tomatoes. Half an onion was done separately

All getting started in the Molchahete and sweet Cambray Onions dressed with EVOO Kosher and fresh ground for the grill

Came out fantastic, the flavors were incredible. You Guy's need to try this Bean recipe it is fantastic. So good I started eating and realized I had not taken a pic

As a side note, our oven for the past decade finally took a dump. Electronics really screwy to deal with and expensive to repair and actually on back order for two months.
We decided since we love cooking so much we would treat ourselves to a commercial quality range and oven.

Our new American Range Oven just delivered today. The back splash is arriving in two weeks. It is magnificent.

Also, for you Bean lovers and Fart haters I have a technique to make that go away I wanted to test before I posted.

Put your dried Beans in water the day before to soak. Before you go to bed pour out the beans into a colander and rinse them and clean your pot then fill two inches above them and let sit overnight.
The next day empty, rinse and clean your pot, then put new water in and boil your beans for fifteen minutes. Drain in a colander, rinse, clean your pot and do this two more times.
Then cook as you normally would.
Beans, no gas. It eliminates 90% of the type of sugars that our stomachs cannot digest causing gas. It actually works.
 
As always Bill, your cooks are simply amazing, your carne asada is as good as it gets. Congrats on your new range. We have gas in this house, and never again will I have electric range, gas is the only way to go. Our gas range is the one that came with the house, and our next project is the kitchen (bye bye $20K) :( I'll be looking at American Range

Okay I'm on this one, really looks great Bill. I love beans so I'll be giving this one a try. That plated picture looks perfect.
Like the industrial strength range too. We know about expensive parts for appliances, we had a upgraded LG gas range in our first home we built here in AZ. The plastic knobs for the burners cracked where they went onto the burner valves. It was under warranty so I had Sears come out to take a look, the tech said he would order new ones. He looked puzzled when he pulled the information up on his laptop. He made a call and came back shacking his head. He told use five Plastic burner knobs were going to cost $550. Sure glad it was under warranty.

Holy Frijoles (sorry, couldn't resist), that is a beautiful range. I mean, the food's awesome, too, but living in a neighborhood without natural gas lines, I'm forever doomed to electric. Well, I guess there is the propane option, but that's pricey.

All kidding aside, the meal looks killer.

I have a question though, where does the charcoal go on that neat new stove?

It not only roasts anywhere from 100 - 475 degrees but it also smokes too, go on Amazon Russ they were having a big sale. I think I paid 39 bucks for it! Free shipping. Just google Oster smoker roaster. For bad weather days tough to beat
