Willy's Six Pepper Venison Chili with Marrow

So had intended to do this cook on the WSM like last time for some smoke flavor but one thunder cracker after another kept blowin in churning things up and pass through.
Anyhow the pepper list
Puya Chili's
Chili Negro
New Mexico Chili's
Ancho Chili's
Jalapeno
Red Bell

Dry Chili's roasted on the CI, then in warm water to rehydrate, look how the Chili Oil comes out when you roast them

Beef Hind Shank being used in as an experiment, not just the meat but I want the large hunk of Marrow to flavor the Chili, being browned and then trimmed and the meat cubed

Rehydrated Chili's seeded (mostly, I always leave some in each) and then in the blender with a small can of Fire Roasted Tomatoes, two Tbsp of ground Cumin, Kosher and fresh ground. Jalapeno's roasted in the CI and cut up and added to the pot

All in after the venison was browned, scallions, red onion also along with diced garlic, and a can of red kidney beans

So while I was waiting I had to use two leeks we had in the fridge so I decided to make Jac Pepin's Potato Leek Soup, we love it

Onions and Leek in the pan and sweated, then 1 large container of chicken stock

Being that I suffer from CRS (can't remember sh!t) I forgot to brown the mushrooms with the leek, did them separate and added them

Mash Potato Flakes (1.5 cups added, then a half cup of whole milk, salt and pepper to taste

A different but delicious dinner, the marrow added wonderful flavor to the chili, will do that again

A couple of excellent looking meals!!! That chili looks nice and hearty and the soup looks like a winner too!!
 
You know that Chili is packed with flavours just looking at it. Cooking @ its best Bill. Will try that soup out aswell
 
That looks crazy good. I have some marrow in the freezer that I picked up on sale one day without a real plan of doing anything with it, chili might be just the ticket.
