Who likes Rack of Pork ?


 
I buy the bone in rack piece then cut it in half and freeze. Love to wet brine to get some extra flavor, then marinate in Italian herbs/olive oil etc and cook indirect around 450-500 degrees until 145ish inside...always fantastic.
 
Oh, soooo, you have to show me this, living on the other side of the states!! Oh well, it could be worse. 🥰
